This is a very small harvest, in which the cherries were selectively picked at peak ripeness, when their natural sugar concentration was at its highest. The additional care required for this selective harvest also allowed us to pay a higher-than-average picking wage. After harvesting, the cherries were dried whole using the natural process, allowing the coffee seeds to remain in contact with the fruit throughout drying. This careful process accentuates the coffee’s sweetness, fruit-forward character, and distinctive strawberry notes. Light roasted to preserve its delicate qualities, this limited edition produces a bright, rounded, and remarkably elegant cup.
